Some features, particularly Apex support, in Salesforce Extensions for Visual Studio Code depend on the Java Platform, Standard Edition Development Kit(JDK).

Install Java Platform Standard Edition Development Kit Once installed, relaunch Visual Studio Code to ensure the changes take effect.
